These strawberry animal cookie cupcakes were inspired by those delicious, childhood favorite, frosted cookies with the sprinkles. Admit it, you still like them and sneak a few in while packing the kiddies lunches (I have no shame, although it does nothing for my diet).
My daughter, who’s six years old, just recently joined the Girl Scouts, and one of the first events she participated in was a bake sale this past weekend (to help raise money for a horse rescue organization). Because I love to bake, as does my daughter, I tried to think of some fun recipes to make that were kid-friendly.
Enter those infamous, sugary-coated cookies shaped like circus animals 🙂
I knew that we could smash them to bits in a baggie to top the cupcakes, and I also knew that the kids would love to be the ones to get the job done. They didn’t fail me, and neither did these treats. We made strawberry cupcakes, used some fluffy white frosting, and sprinkled the animal cookies on top. When it comes to food, I love the right combination of crunchy and soft/chewy, and these were perfect!
- Boxed strawberry cake mix (or from scratch)
- Fluffy white frosting (of course, you can also use strawberry frosting)
- Frosted animal cookies
- Prepare the cupcakes and let cool completely before frosting.
- Smash ¾ of the bag of animal cookies in a plastic bag and sprinkle the crumbs on top of each cupcake!
