This Bacon, Egg, Cheese and Hashbrown Breakfast Casserole recipe reminds me of making quiche, and it’s every bit as delicious! This is truly the yummiest breakfast or brunch recipe, and even perfect for holidays like Christmas or Easter!
Bacon, Egg, Cheese and Hashbrown Breakfast Casserole
For this casserole recipe, you’ll need eggs, milk, frozen hash browns, green onions, salt, cheddar cheese, and of course, bacon! If you want, you can substitute the bacon for chopped ham or even sausage. Or even better, use all three meats! Oh my goodness, the options are endless here, folks. I’m already thinking of adding other goodies, too! Wouldn’t broccoli or spinach be good? You know, that reminds me of my Spinach, Ham, and Potato Frittata recipe – you’ve got to try that one next!
Ingredients
5 eggs
1/2 cup milk
3 cups frozen hashbrowns, thawed
1/3 cup green onions, sliced
1/2 tsp salt
1 1/2 cups mild cheddar cheese
5 slices bacon
Instructions
Pre-heat oven to 350º.
Cook the bacon.
In a large bowl, stir together the eggs and milk.
Add the hash browns, green onions, and salt.
Pour mixture in a greased 9 inch pie plate.
Add 1 cup of cheese and 4 slices of bacon on top.
Bake for 30 minutes.
Remove and add the remaining cheese and crumble up the last of the bacon and sprinkle on top. Place back into the oven and bake for 5 minutes.
