3 Cheese Beef Stroganoff Casserole

Tired of the boring ole’ beef stroganoff recipe? So was I when I decided to experiment and do something different, leading to this 3 Cheese Beef Stroganoff Casserole! I love cheese, so naturally, I thought about mixing a few cheeses in, such as white cheese, Velveeta and Mozzarella! The result was unbelievably creamy and delicious, making it my new favorite comfort food. If you are looking for a new beef stroganoff recipe, then this, my friends, just might be it! Serve with a side of buttermilk biscuits or bread rolls.

Ingredients

1 lb ground beef (more if you like extra meat!)
All-purpose flour
2 tablespoons olive oil
2 tablespoons butter
1 medium onion, sliced
8 ounces fresh mushrooms, sliced
1 (10 3/4-ounce) can beef broth
1 (10 3/4-ounce) can cream of mushroom soup
1 cup salt
1/4 cup black pepper
1/4 cup garlic powder
1 cup white cheese sauce*
Cooked egg noodles
1/2 cup shredded Velveeta
1/2 cup Mozzarella cheese

*White Cheese Sauce

1 cup butter
3 cups shredded Monterey Jack cheese
1 cup sour cream

 

Directions

Preheat oven to 350º. Brown the ground beef and then remove and drain.  Place in bowl and set aside. Add the onion slices and mushrooms to the pan that you browned the meat in. Saute for a few minutes, until the onions are tender. Sprinkle with 1 teaspoon flour and add the pepper, garlic powder and salt. Dump the meat back to the pan with the onion and mushrooms and pour the cream of mushroom soup and the beef broth on top. Cook over low heat for 30 minutes, covered. In the meantime, prepare the white cheese sauce (directions below) and the egg noodles. Stir in the cheese sauce after the 30 minutes is up. Grease a casserole dish with cooking spray. Dump the noodles and beef stroganoff in the dish and mix together. Spread the Velveeta and Mozzarella cheeses over the top and place in oven for 10 minutes.

*White Cheese Sauce

Melt butter in pan over medium heat. Reduce heat to medium-low, and stir in shredded cheese until melted. Mix in sour cream and stir occasionally until heated. Do not boil.
